American Wild Ale
Sometimes Belgian influenced, American Wild Ales are styles that are introduced to “wild” yeast or bacteria, such as Brettanomyces, Pediococcus or Lactobacillus. This may happen by various “sour mash” techniques, mixing them into the beer directly, or introducing them through oak barrels that have been previously inoculated. Regardless of which technique is employed and how, these little creatures often leave a funky calling card that can be quite strange, interesting, and pleasing to many.
