All In is a Foedre-Aged Wild Saison, brewed with the good dudes from Escarpment Laboratories @escarpmentlabs .

Brewed with 2-Row malt, chit malt, raw wheat and malted wheat, and hopped in the boil with Sterling and Simcoe hops. This beer was fermented in foedre with a whole bunch of Escarpment’s finest yeast and bugs — fruit bomb saison (both sacch and brett versions), hop tolerant lactobacillus, and probably a few other yeast thrown in there too. After conditioning for just over 5 months in foedre, the beer was transferred to stainless where it was dry hopped lightly with Loral hops. The resulting beer is beautiful — toeing the line between new world and old world saison, it has a rustic earthiness and light herbal character, but also has a touch of bright citrus and stone fruit. Lightly tart, funky, and super bright.
