2 Crows Good Air (473ml)
Good Air is Foedre Aged Wild Saison with Buckwheat, brewed with the awesome folks from Block Three Brewing @blockthree , from St Jacobs, Ontario.
Brewed with 2-Row malt, flaked barley, a touch of rye malt, and raw buckwheat. We did a cereal mash with the raw buckwheat first (which was super sticky and awful to deal with) then a multiple step mash with the rest of the grains. Hopped in the boil with Golding, Sterling, and Hallertau Blanc, this beer was fermented and conditioned in foedre with yeast harvested from Coalesce Brewing’s (@coalescebeer ) Foreward (which includes a yeast harvested from their brewer’s backyard in Vancouver) as well as some hop tolerant lactobacillus. The beer was conditioned in foedre for just over 4 months, then transferred to stainless where it was dry hopped with a combination of Azacca and Huell Melon hops. .
The resulting beer is super cool — very complex, but incredibly drinkable. Earthy, rustic, with a touch of tartness to it and some huge pineapple and orchard fruit notes both from the hops, and from the esters that have been formed by the brettanomyces + buckwheat compounds.
