2 Crows Maestro Brett Gose (473ml)
Maestro is a foedre aged Brett Gose, sitting at 4% ABV and 1 IBU. Brewed with 2-Row malt, wheat malt, and a touch of raw wheat, with a tiny amount of aged hops added to the mash, with sea salt and coriander added late in the boil. Soured in foedre with lactobacillus, fermented with a blend of 6 different strains of Brettanomyces, and allowed to condition for several months in oak to allow for the yeast character to fully express itself. The resulting beer is tart, dry, slightly herbal, delicately funky, with a really nice yeasty/sourdough character to it.
