2 Crows Brewing Co. is the brainchild of husband and wife duo Mark and Kelly Huizink and brewer Jeremy Taylor. They brew modern beers with care and focus on quality. Their aim is to get people thinking about craftsmanship, where their beer is coming from and the various characteristics that make beer great.

Tasting Notes

OK OK OK is not as aggressively funky as some other farmhouse offering from 2 Crows, it’s more of a hybrid between juicy wheat beer meets fruit/zesty farmhouse-something. Subtle yeast character leads into stone fruit notes that mingle with lime zest and some salinity from the sea salt. The palate is juicy and fresh with lots of zest, and a light mouthfeel mixed with a light dry finish makes it ultra-thirst quenching.

OK OK OK is a farmhouse beer with apricot, lime, and sea salt. It was brewed in November of last year, and fermented with Verdant yeast (for a soft mouthfeel) alongside all of 2 Crow’s funky foedre barrel cultures. Malts from PEI Shoreline Malting, and hops used include Chinook, Sterling, and Bru-1.

The beer was left to hang out for a while in foedres (that’s a really big wooden barrel), then this summer about 200kg of Apricot puree was added to the foedre to ferment out, then 4 cases worth of lime juice and zest were added. Finally, the beer was transferred back to stainless steel conditioning tanks, and a subtle amount of NS Sea Salt from OK Sea Salt in LaHave.
