Benjamin Bridge vineyards are located in the heart of the Gaspereau Valley on the Bay of Fundy, where the cool climate bears an uncanny affinity with the Champagne region of France. The estate makes a range of wines; sparkling, white, red, rose, dry and sweet. Though the focus is on making world-class Méthode Classique sparkling wines that have been compared in tastings to Champagne. The hand crafted wines of Benjamin Bridge have helped raise the profile of the Nova Scotian wine industry.
More than any other Canadian wine region, Nova Scotia’s cool climate makes it perfectly suited for the creation of superbly balanced, magnificently long-lived icewines with brilliant acidity and bright aromatic flavours.
Tasting Notes
Lovely golden hue. Elegant floral and citrus aromatics. Lush apricot and honey on the palate. Great length on the finish with dynamic balance between sweetness and vibrant acidity.
Method
Waiting and watching for the perfect moment, the icewine harvest begins in late fall after temperatures have dipped to -10°C. With the Vidal grapes evenly frozen they are ready to be handpicked from the vines and gently pressed to extract their precious juice. Then, after an additional four years or more of careful ageing, the Borealis icewine is finally ready.
