A domain mentioned since 1888 and which bears the name of Millot for four generations. The vineyard covers 7.5 ha in Meursault, Puligny-Montrachet and Beaune, managed since 2010 by Émilien Millot.
Tasting Notes
Delicate citrus, floral and slightly woody nose. The palate is round and rich balanced by a medium acidity. Long, lingering, harmonious finish.
Method
The grapes are pressed and the juice is left to settle for 12 to 14 hours. Alcoholic fermentation via natural wild yeasts. Regular battonage helps suspend the yeast and for a healthy fermentation and malolactic fermentation happens naturally. The wine rests for 12 months in oak barrels and about 4-6 months in stainless steel tanks. The wine is racked off the lees, not filtered and minimal So2 is added.
