Birgit Braunstein lives in the village of Purbach in Austria, in the Burgenland region. She comes from a winemaking family dating back to the 17th century. Though 1996 was the first vintage under her own name. Since 2000, she has been farming according to biodynamic principles. Most vineyards are located on, or close to, Leithaberg, a few hundred meters above sea level and a relatively high altitude compared to other vineyards in Burgenland. The soils are predominantly slate and limestone.
Tasting Notes
Method
The Rosenquarz is a sparkling wine produced according to the old “ancestral” method of bottle fermentation. Best grape material is sourced and no yeast, sugar or sulphur is added. This sparkling rose is made from the red grapes Zveigelt and Blaufrankish and the wine is bottled before the primary fermentation finishes thus trapping the CO2 in the bottle as well as yeast lees. Unlike traditional method sparkling wines where the yeast is removed from the bottle, this ancestral method sparkling wines retains the yeast in the bottle. Each bottle ferments individually and is unique.
