Bodegas Aessir started off with the help of the Carbó family in Sant Sadurní d’Anoia, Barcelona, who has been in the Cava business since 1929 and managing 8 hectares of different varieties. Today Bodegas Aessir is committed to some very unique organic winemaking projects such as the production of wines made of the Bobal variety in the province of Cuenca at 969 meters above sea level.
Tasting Notes
Bright red color with violet flecks. The nose is expressive with well-marked ripe fruit typical of the variety showing red and black fruit. The palate is lively with fleshy dark fruit and ripe tannins.
Method
Old vine organically grown Syrah grapes from high altitude vineyards are naturally fermented without any So2 additions at any point during winemaking or at bottling. The wine is fermented in stainless steel and there is no oak treatment.

Certainly not to all tastes, this Syrah comes off rather light and punchless for this varietal.
Lacking depth on the nose and palate. The final impression is that it’s too “young” and requires aging,
though not sure it will ripen or improve over time.
