The Premiere Cuvee is a very personal interpretation of the whole region, through the selection of 35 of the 320 crus of champagne.It is the flagship of the Bruno Paillard Champagne style. Made from exclusively first pressing (the purest juice) of Pinot Noir (45%), Chardonnay (33%) and Pinot Meunier (22%), part of which (20%) was in barrel for the first fermentation. It contains reserve wines of 25 vintages, since 1985; up to 50% of the final blend. The wine is aged three years sur lie, then a minimum of a further five months after disgorgement (longer than the legal requirement of 15 months in the bottle prior to release and for 12 month of that time a least 12 months on the lees).

Maison Bruno Paillard sprang from its founder’s desire to create a champagne that exemplifies balance and purity. A great champagne for Bruno Paillard is – above all – an “assemblage”, blending: of diverse crus, grape varieties and vintages. It is about the constant desire to capture the quintessential finesse and elegance which champagne can bring when it is served with love and care.
Champagne is rich in its extreme diversity… different terroirs and crus all have unique personalities. For one house, putting together a wine is very like for a painter carefully choosing the origin of colours. The house has consistently worked with grapes grown by the same families since it was founded. Likewise, parcels of land have been carefully chosen. Maison Bruno Paillard manages many “Grand Cru” classified vineyards whose grapes make up the Champagne Paillard cuvees.
The vineyard team, led by Mathieu Pingret, applies a sustainable approach to viticulture. No herbicides or pesticides are used; ploughing; partial grassing; regular analysis and specific approaches to each plots, and certified organic fertilizers only. This commitment to sustainable viticulture is also illustrated in a multitude of smaller details, for example, planting roses close to vineyards. As well as promoting biodiversity, it allows the viticultural team to detect possible mildew attacks; as the rose is more sensitive to the disease than a vine, it will be affected first. The creation of flower covered headlands comprising various local species to promote natural biodiversity in the vineyard. The presence of different varieties of flower supports bee populations and pollination of the vines.
Golden in the glass. The palate is mouthwatering and finely balanced with notes of crunchy Honeycrisp apple, toast, lemon curd and apricot with a lively mousse, while a streak of chalky mineral lingers on the finish.

This is an “Extra Brut” style of Champagne, so it has a very low dosage, less than 6g/L.
