Celler Credo is a project by the historic top quality Cava producers Recaredo. The winery is located in Sant Sadurní d’Anoia, about 45 minutes from Barcelona, in the Penedes region of northern Spain. The Mediterranean variety Xarello is the leitmotif of Celler Credo’s wine project and the thematic thread that gives rise to their wines. Aged on the lees, macerated with the grape skin or stems, with no sulphites added – made today using techniques they learned from their grandparents… In short, a thousand and one ways of interpreting Xarello. They follow organic and biodynamic vineyard practices and minimal intervention in the winery.
Tasting Notes
This is a fresh and crisp white wine made to be enjoyed at any occasion. It is citrusy with tart and bright notes of sorrel and stony minerality. Enjoy with crusty bread rubbed in olive oil, garlic, fresh tomatoes and herbs, charred peppers, dishes with anchovies or sardines.
Method
A fresh, Mediterranean wine that pays tribute to historical varieties of the Penedès region. And the Winner is… is made from grapes grown on carefully selected organic dry farmed plots in the Penedès (Barcelona) region. Made of Xarello, Macabeo and Parellada. The grapes are hand picked and fermented with wild yeasts in stainless steel tanks. Minimal sulphur dioxide (just 44 mg/l, while 150 mg/l is the max. permitted by the EU for organic white wines). Certified organic and vegan friendly.
