The Philipponnat family have been wine growers and merchants since the 16th century. Their 17th hectares of vineyards in the heart of Champagne, situated in Ay, Mareuil-Sur-Ay and Avenay anre classified Premier Cru and Grand Cru on chalky soils and bright southern exposure. Philliponat aims to preserve the precious terroir by using natural and traditional methods to work the soil like hoeing by hand and ploughing with horses. Even in their non vintage wines, the house highlights the predominant vintage of the blend as well as disgorgement date and dosage on their back labels.

Tasting Notes

The wine is 100% Pinot Noir, made from first press juice from exclusively Premier and Grand Cru plots from Montagne de Reims and estate vineyards in Mareuil-sur-Ay. The juice is vinified using traditional methods to avoid premature oxidation. Partial malolactic fermentation for the wines in vats and vinification without malolactic fermentation for the wines in wooden barrels. Extra-brut dosage (4.25 g/litre) to maintain a balance between freshness and vinosity without masking the wine’s character and purity. The wine ages in bottle for five to seven years to develop maximum complexity and to highlight the secondary and tertiary aromas which are the hallmark of extended aging on lees. The nose offers and authentic expression of Pinot Noir with notes of citrus and blossoms and complexity. The palate is ample with lots of fruit and pleasing minerality, vinosity and peppery notes.
