Domaine Bernard Defaix is a fourth generation family of vine-growers. Bernard Defaix started with 2 ha in 1959 and shortly after began selling their wines outside of the region. The two sons of Bernard have been managing the domain for the past twenty years. Sylvain is in charge of the vinification, the ageing, the bottling and the preparation of orders while Didier takes care of the vineyard and the general management of the domain. Helene, Didier’s wife, looks after the administrative and the commercial part of the business.
Tasting Notes
Fresh and floral on the nose and palate with excellent structure and concentration. This wine is refined, well balanced and harmonious with a broad mouthfeel and lots of energy and minerality that carries onto the long crisp finish. Serve around 12°C with fish in sauce or a chicken with cream sauce.
Method
Made from organically grown Chardonnay grown on soil dating back to the Upper Jurassic period (Kimmeridgean). The grapes are from the Premier Cru vineyard, “Les Vaillons”, the plot is are located on a southeast facing hillside. The grapes are handpicked, sorted and softly and slowly pressed to extract the best juices. The wine undergoes a slow alcoholic fermentation with natural yeasts at 20°C; 20% used oak barrels and 80% stainless steel before aging on the fine lees for eight to 12 months. The lees are regularly stirred during the first six months.
