Opening their brewpub in 1998, Dieu du Ciel has gone on to world acclaim for not only their wide range of styles, but the quality and consistency of each beer they make. With a lively, and character filled pub in Montreal’s Plateau neighbourhood, to their list of collaborations with breweries all over the world, DDC has something for everyone.
Tasting Notes
Peppery aspects of the Belgian yeast strain are the first aromas out of the glass along with subtle bubblegum, but the spotlight is quickly stolen by the delicious aromas of citrus fruits and tropical fruits provided by the Citra hops. On the palate this beer is rich of pineapple, mango, passion fruit, apricot, and orange notes. The yeast character brings a spicy touch to the taste profile, while the hops are also responsible for a fairly powerful bitterness that lingers in the mouth for a long time. Some resinous notes among all this herbaceous and fruity hops enhance the tasting. The malty body, very to-style of the Belgian Tripel, offers flavors of honey and light amber malts. The texture is round and unctuous with moderate carbonation that leads into finish that has a pleasant light heat of alcohol.
Method
Complex, sometimes mild spicy flavour characterizes this style. Yeast-driven complexity is common. Tripels are often on the higher end of the ABV spectrum, yet are approachable to many different palates. The Belgian-style Tripel is similar to Belgian-style golden strong ales, but are generally darker and have a more noticeable malt sweetness.
Inspired by the tradition of Belgian Triples, this beer is brewed in the New World way, characterized by the use of American hops. Citra hops are used without restraint, giving it flavors of mango, cantaloupe and passion fruit.
