Doga delle Clavule is located in the borough of Magliano in Toscana, in the heart of the production of the Morellino di Scansano DOCG. The farm estate, crossed by a river after which it’s named, spreads out for an overall area of more than 130 hectares; 60 ha are dedicated to vineyards, including 20 ha for Morellino (Sangiovese), 7 ha for Bianco Toscana IGT, and the remaining for Rosso Toscana IGT. The landscape alternates between vineyards and olive groves. Several Etrurian necropolis were found in the territory witnessing the existence of populations devoted to vine growing since ancient times. Doga delle Clavule is another property belonging to the Caparzo family whose wines have been longtime favourites of Bishop’s Cellar customers.
Tasting Notes
Straw yellow in the glass, the bouquet is filled with wildflowers and stone fruit- think yellow peach. On the palate, the wine is delicate and structured at the same time, wth pleasant savoury notes. Pair with freshly-made pesto pasta dishes, a variety of cold salads, and/or even some whole, grilled fish.
Method
Made from 100% Vermentino, the grapes are grown on the gentle hillsides of the Tuscan Maremma, on terrains of sedimentary origin and loosely packed neo-autochthonous soils derived from Pliocene marine sediments, benefiting from both the sea breezes, which greatly reduce the risk of vine pathologies, and from the light reflected from the Tyrrhenian Sea. Primary fermentation is temperature controlled anywhere from 16-18 degrees C for 15/16 days. No malolactic fermentation occurs and the wine is aged in stainless steel before release.
