The Domaine de la Grosse Pierre is located on the granite slopes of Chiroubles in the heart of the Beaujolais crus. This family estate was created by Georges Passot in the 1960s then was passed down to his children Alain & Véronique in 1979 and since 2018 it has been in the able hands of their daughter Pauline Passot. After various experiences in sommellerie in France and abroad, Pauline decided to return to her native land in Chiroubles, Beaujolais. Today they cultivate 9 ha of organic Gamay Noir vines on three crus; 7.7 ha of Chiroubles, from which she produces four different cuvées, as well as tiny parcels in Morgon and Fleurie. Pauline’s wines are pure expressions of their terroir.
Tasting Notes
Fragrant and fresh aromas of peonies, rose petals, sweet red berries and orange zest. Medium bodied and silky palate with lots of concentration, though not at all over extracted. Deep, sapid with a pleasing perfumed mouthwatering finish. This is an extremely versatile food wine than can be enjoyed with a wide range of lighter meats, ham, veal, chicken and wonderful with earthy grilled mushrooms.
Method
The Chiroubles Claudius is made from the estates oldest Gamay vines. The grapes are vinified using a “semi-carbonic” maceration; whole bunches undergo a few pump overs throughout the 12 day maceration at temperatures that don’t exceed 25°C. Fermentation is natural and spontaneous, there are with no inputs during vinification and no sulphites added. The wine undergoes a natural malolactic conversion and spends 11 months resting in oak barrels before bottling without filtration or fining.
