Domaine Bernard Defaix is a fourth generation family of vine-growers. Bernard Defaix started with 2 ha in 1959 and shortly after began selling their wines outside of the region. The two sons of Bernard have been managing the domain for the past twenty years. Sylvain is in charge of the vinification, the ageing, the bottling and the preparation of orders while Didier takes care of the vineyard and the general management of the domain. Helene, Didier’s wife, looks after the administrative and the commercial part of the business.
Tasting Notes
This Chablis is characterised by freshness, power and tenacity. The bouquet displays a dominance of mineral notes, along with the delicate touches of citrus fruit (lemon and grapefruit).
Method
Bernard Defaix’s vines in the appellation Chablis spread over 12 hectares. This wine is aged in stainless steel tanks so as to respect the typicity of the appellation.

This wine ticks all the boxes for classic Chablis. Layers of flavour. Stone fruit and soft white flowers on the nose. Long, long finish with just the right amount of acidity. Balanced and enhanced by 3 years of bottle age. A joy with or without food. Great value!
