Domaine Bernard Defaix is a fourth generation family of vine-growers. Bernard Defaix started with 2 ha in 1959 and shortly after began selling their wines outside of the region. The two sons of Bernard have been managing the domain for the past twenty years. Sylvain is in charge of the vinification, the ageing, the bottling and the preparation of orders while Didier takes care of the vineyard and the general management of the domain. Helene, Didier鈥檚 wife, looks after the administrative and the commercial part of the business.
Tasting Notes
This is a white that captures the essence of terroir; one gets the impression that it is a wine from stony soil and a sunny exposure; it is powerful and complex with aromas of stone fruit, gunflint and persistent minerality. The C么te de Lechet is one of the Premiers Crus of Chablis with the most exceptional ageing potential. Enjoy with with fish or chicken served with butter or cream sauces.
Method
Domaine Defaix cultivate 8 hectares of the Cote de Lechet Premier Cru, located on the slopes of the village Milly and on the right bank of the river Serein. They are the biggest owners of this cru.聽 The C么te de L茅chet is 51 hectares and sits happily on the left bank by itself. Its terroir is sun-drenched, with steep slopes that reach up to 38% in some places!聽 The grapes ripen particularly fast and the harvest usually starts quite early. Some nice Kimmeridgian marls lie at the foot of the vines, covered with clay and “terre 脿 lapin”, a form of limestone sand eroded by cold and frost. Because of the slope, thundershowers end up pushing some stones to the bottom of the C么te de L茅chet. Despite having good drainage, this soil calls for hard work from its wine producers who regularly have to haul earth back up the hill.聽 When the Defaix were planting their vines, they found impressive fossils of Exogyra virgula that had been perfectly preserved.聽 Exogyra is an extinct genus of fossil marine oysters and is said to contribute to the minerality of the wine.聽 聽
