Domaine Fouassier Skin (750ml)
This domaine has been in the family for 10 generations. It now covers 59 hectares of vineyards planted primarily with the Sauvignon varietal. Fouassier vinifies their wines separately according to their lieu-dits (individual parcels). They are committed to using growing methods that respect the soils, water, life forms and natural rhythms in the vineyards in order to produce authentic, living wines. The entire domaine is managed in accordance with the principles of Biodynamic Agriculture. The Biodynamic approach and the lunar calendar dictate the work in both the vineyards and the winery.
Organic / biodynamic Sauvignon Blanc grapes are manually harvested and destemmed by hand. The grapes are macerated in Tuscan terracotta amphorae for 9 to 11 months then rest in these same amphorae until the following harvest. The wine is removed from the skins and and is bottled in March (17 months after the harvest). The winemaking process doesn’t include any inputs or sulphites. This wine is classifies as an orange wine.
