This 17th century property was bought by Pascal Maillard’s father in 1952. Situated on the slopes below Savigny-les-Beaune at an altitude of 230m a.s.l and a kilometre from the town of Beaune the vineyard of Chorey-les-Beaune can be found. Soils consist of calcareous brown earth, marlstone and sandy limestone. The biggest threat to a quality harvest are frost and autumnal rains, which both occur frequently.
Classic aromas of toast and lightly roasted hazelnut over citrus and stone fruit. The palate is focused with a wonderful intense mineral character. Enjoy with seafood, cream based pastas, turkey dinner, soft cheeses.
Vinification is strictly traditional; the alcoholic fermentation is done at controlled temperature and lasts 12 to 20 days – depending on the vintage. The aging takes place in oak barrels, of which around 25 to 80% are new barrels, depending on the year and the appellations. After aging for 12 to 15 months, the wines are bottled, generally without filtration, so as to keep all the body and the fruit for excellent ageing.

Want balance, just the right amount of acidity and weight, polished and long on the finish, interesting and round on the palette, with beautiful aromatics as the opening act … you’ll love this! Great value, great experience – one that conjures up summertime visuals of Provence (I know wrong area, but right visual)
