This 17th century property was bought by Pascal Maillard’s father in 1952. Situated on the slopes below Savigny-les-Beaune at an altitude of 230m a.s.l and a kilometre from the town of Beaune the vineyard of Chorey-les-Beaune can be found. Soils consist of calcareous brown earth, marlstone and sandy limestone. The biggest threat to a quality harvest are frost and autumnal rains, which both occur frequently.
Tasting Notes
Classic aromas of toast and lightly roasted hazelnut over citrus and stone fruit. The palate is focused with a wonderful intense mineral character. Enjoy with seafood, cream based pastas, turkey dinner, soft cheeses.
Method
Vinification is strictly traditional and filtration is light, allowing the superb quality of the grapes to show through.
