Domaine Sainte Cécile du Parc was started by Stéphane Mouton and Christine Mouton Bertoli in 2005. They moved to the Languedoc in southwestern France in 2003 after living in Tuscany for several years. The previous owner of the property had sold his grapes to the cooperative winery in Pézenas, but new owners wanted to craft their own wines. As of 2013 the wines carry an organic certification.

Tasting Notes

A blend of Syrah (75%) and Cinsault (25%), hand harvested from low yielding vines. The grapes are de-stemmed and fermented in small temperature controlled vats before being aged in barriques and demi-muids for 12 months.
It’s an intense and spicy red with an herbal edge and a hnit of moka, dark cherry and brioche. The palate is generous, concentrated with peppery spices and rich fruit beautifully balanced with perfect acidity.

Our Thoughts

Born and raised under the warm Mediterranean sun, this Syrah dominated blend comes from old vines that are organically grown. Impeccably balanced with a mouth coating palate of spices, coffee and blackberries. During fermentation the winery employs carbonic maceration which helps maintain freshness in the glass.
