Indie Ale House in Toronto’s Junction neighborhood has been established since 2012. Since that time they’ve gone on to assert themselves as one of the city’s best brewpubs, and even in the last couple years expanding to a full sized brewery. Their range of styles goes from refreshing lagers, all the way to a full-fledged barrel program. And if you think that’s impressive, wait till you try their fried chicken.
Tasting Notes
Loaded with dank herbal aromas that mingle with pineapple and citrus notes. Shadow Chaser drinks with a juicy, almost fluffy texture and has no shortage of stone fruit and tropical fruit flavours. The finish is light, dry, and refreshing with balanced bitterness. A true daily drinking lighter IPA!
Method
Emphasising hop aroma and flavour without bracing bitterness, the New England IPA leans heavily on late and dry hopping techniques to deliver a bursting juicy, tropical hop experience. The skillful balance of technique and ingredient selection, often including the addition of wheat or oats, lends an alluring haze to this popular take on the American IPA.
Shadow Chaser IPA is brewed with Citra, Idaho7, and Sabro hops. All known for their aromatic properties that together provide a wide array of herbal, citrus, stone fruit, and tropical fruit aromas and flavours.
Our Thoughts
Deliciously dank. With an extremely green and herbaceous nose, you might immediately think bitter but in true North East IPA-style, it drinks incredibly soft and well rounded; dandelions and clementines really stand out to me here. Perfect springtime IPA.
