The Lignères family cultivates organic and biodynamic wines around the Alaric Mountain, in a privileged corner of Languedoc-Roussillon. La Baronne grows a selection of typical grapes from this region, but the family has a special affection for Carignan. They are constantly striving to heighten the expression, finesse and elegance of this signature regional variety. The domaine is proud to cultivate one of the oldest Carignan vines of the Languedoc, dating back to 1892.
Tasting Notes
This is an attractive, fresh Corbières, full of fruit and charm. Rich and appealing. Aromas of plum, pepper, toast and spicy oak on the nose. The palate is smooth, complex, and long on the finish. Enjoy with roast meats, lamb, stews.
Method
This is the emblematic cuvée of the winery. A blend of Carignan, Grenache and Syrah, from parcels planted respectively in 1955, 1985 and 1990 on the slopes of Montagne d’Alaric. A blend of biodynamic grapes; 55% 25 year old Syrah, 30% 60 year old Carignan and 15% 30 year old Grenache from the blue marls and clay limestone soils of the northern Corbières. The grapes are hand harvested, sorted and destemmed. Fermentation in stainless steel and cement tanks via indigenous yeasts with about 4 weeks of gentle maceration. Aged for 12 months in older barrels with stirring of the fine lees. Bottled unfined and unfiltered.
