Bruce Ewert moved his young family to Nova Scotia in 2004 with the intention of crafting traditional method sparkling wines in an idyllic and tranquil environment. The estate vineyards and the winery is now a certified organic winemaking facility.
80% Marechal Foch, 15% Leon Millot, 5 % Luci Kuhlmann elevated with dried grapes in a dry Ripasso-style. Grape drying is an old traditional European method to enhance quality and adds richness to the blend. Aged for 17 months in premium American oak barrels. Displays berry, chocolate, coffee and toasted oak aromas with soft tannins.
