Lightfoot & Wolfville is owned and operated by the Lightfoot family who have been farming in the Annapolis Valley for eight generations. Lightfoot & Wolfville brings a light touch and enlightened approach to both the agricultural and artisanal aspects of viticulture and winemaking. They work in harmony with nature and letting the land offer up its innate best, without subjecting it to aggressive inputs. The winery is located on the home farm site, this land has been in Michael’s family for four generations.
Tasting Notes
Brilliant yellow in the glass with a intense and bouquet characteristic of Riesling ice wine. Aromas and flavours of caramelized apple, honeysuckle, beeswax and apricot. The beauty of Nova Scotia ice wine lies in its fine balance of acidity and sweetness. This wine exhibits piercing fresh acidity, unctuous sweetness and incredible concentration of fruit flavours. Pair this with homemade apple pie and a slice of aged cheese for good measure and your taste buds will be in for a very special treat. A little goes a long way!

Method
The 2021 Terroir Series Icewine is Lightfoot & Wolfville’s inaugural Riesling icewine release. The grapes are from their home farm, the block directly in front of the winery. The forzen on the vine grapes were harvested by hand on December 10th 2021 at 37 brix and pressed in a traditional Marzola basket press followed by a long, cool fermentation in stainless steel. The wine is certified organic by Ecocert Canada & Biodynamic by Demeter.
