Lightfoot & Wolfville is owned and operated by the Lightfoot family who have been farming in the Annapolis Valley for eight generations. Lightfoot & Wolfville brings a light touch and enlightened approach to both the agricultural and artisanal aspects of viticulture and winemaking. They work in harmony with nature and letting the land offer up its innate best, without subjecting it to aggressive inputs. The winery is located on the home farm site, this land has been in Michael’s family for four generations.
Tasting Notes
Luminous straw-gold in the glass. On the nose, zesty orange peel and grapefruit pith notes are softened by dried chamomile and white pepper accents. Bright, stony and textured with crunchy acidity. Pairing suggestions include ricotta ravioli, steamed white fish with lemon butter and herbs, steamed clams with fennel sausage, bitter greens and apple salad, and fresh cheeses, especially from goat’s milk.
Method
From just 1-acre of Sauvignon Blanc vines grown in the Oak Island Vineyard in Avonport. Hand-harvested October 19th and whole cluster pressed. Barrel fermented with wild yeasts in used French oak – a combination of barriques and one demi-muid. Aged eight months sur lie prior to bottling. Only 149 cases produced!
