François-Xavier Nicholas is an artisan negociant in the Rhône area of France and he primarily works with growers in the Rhône, Provence and Languedoc regions. He recognizes that quality ingredients are the foundation of good wines hence his close relationships with growers and is hands on approach in the cellar. He works closely with with vignerons and winemakers to ensure that wines under his label are crafted with the best fruit and in the style that best expressed their primary ingredients and the land.
On the nose, notes of crushed strawberries, currants, and pink grapefruit. On the palate, those fruits carry through; its fruity with light refreshing acidity and a crisp dry finish. Use as an aperitif, pair with your favourite cold salad, or serve alongside a number of seafood pasta dishes.
Made from 40% Grenache, 30% Syrah, 20% Cinsault, and 10% Merlot, the grapes come from vines that are on average 20 years old and the yields are about 60hl/ha. The rosé is made by direct pressing; fermentation lasts 10 days at a controlled temperature of maximum 24 degrees C and the wine is aged for 3 months in vats on the lees.
