Marchand Tawse Gevrey Chambertin “En Champs” (750ml)
Marchand-Tawse is a co-venture between native Quebecois turned Burgundian Pascal Marchand and Canadian Moar Tawse. This duo of vignerons / micro-négociants are working with their partner-growers in the many appellations of Burgundy, they embrace organic and biodynamic farming practices and craft wines of purity and class.
The vineyards are located in the northern part of the appellation below premier cru Champeaux. Thin soil well drained soil and east facing vineyards provide ideal growing conditions in this Cote de Nuits appellation. The grapes are 100% destemmed and undergo a short cold maceration, one pigeage a day at the start of alcoholic fermentation and gentle extraction for 20 days. 20 months aging in 65% new oak with one racking before bottling and no filtration or fining.
