After travelling around the world’s best wine (and surf) regions, Taras and Amber Ochota decided they wanted to make premium wine, back home in South Australia. Initially, Grenache from Mclaren Vale and Syrah from Barossa Valley were the main goals, with a focus on small batch, single vineyard wines. Since then, the Ochotas now dabble in several different varietals in interesting, older plots throughout Adelaide Hills.
Throughout their travels of France, smaller, biodynamic producers left a big impression of them, influencing their wine-making- something that can still be seen today; hands-off, minimum-intervention, picking early to maintain natural acidity, ferments using indigenous yeasts, whole-bunch pressing the whites, whole-bunch fermentation and longer maceration for the reds. “A holistic approach from autumn to autumn in the vineyard, with the philosophy of going back to basics to create something delicious and unique with mother nature.” – Taras & Amber Ochota
Taras Ochota died suddenly in 2020. He was a huge talent, a friend to many and will be sorely missed. His wife Amber and the Ochota team are continuing the project.
Tasting Notes
A pronounced floral nose, crushed rose petals, violet and stems with notes of garrigue and northern forest undergrowth. Gingerbread and subtle peaty elements. The palate is shows red fruit, savoury elements and slightly meaty components. This is the type of wine that evolves over time in the glass, revealing more nuanced aromas and flavours as you you sip and savour.
Method
The grapes were cold soaked until wild yeast fermentation whole bunch fermentation. Gently hand plunged. Basket pressed and put into seasoned french barriques and one new chassin.  Sporadic barrel rolling for the first 3 months. Carefully racked via gravity and bottled unfined and unfiltered with no additions during the winemaking and minimal SO2 at bottling. Â
Our Thoughts
What is there to say about the wines of Ochota Barrels that hasn’t been said before? Ochota makes remarkable wine in the most unusual of landscapes, deep in the forest of the Basket Range (a sub-appellation of the Adelaide Hills). It’s an amazing part of the world that produces singularly unique wines that are a far-cry from the extracted and heavily oaked wines that Australia can sometimes be associated with. The name of this wine is an apt one – it truly tastes of the forest with notes of cherry, peppercorn, moss, damp earth and more. It’s savory and juicy and bright – everything a Pinot Noir lover looks for in a wine. This may be the best of all the Ochota Barrels wines in the store.
