Paolo Scavino is an historical winery in the Barolo region. It was founded in 1921 in Castiglione Falletto by Lorenzo Scavino and his son Paolo. Farming has always been a family tradition and passion. Enrico Scavino together with the daughters Enrica and Elisa, fourth generation, run the family Estate. He started to work full time in the winery in 1951 when he was 10 years old. A young winemaker who inherited the passion and devotion for the land he belongs to. Through over 60 years of experience his focus has been to invest on important cru of Nebbiolo to show the uniqueness of each terroir.

Tasting Notes

A textbook Barolo with aromas of violet, rose, leather and tobacco.  The palate is full bodies with lots of acid and small firm tannins. The wine has ripe red fruit and spice on the palate which complement the structure.  There is a long lingering savoury finish. Will benefit from decanting. 

Method

This Barolo represents the history and tradition of blending different cru of Barolo. It comes from the best plots of seven single vineyards in the Barolo appellation. The diversity of soils, exposure and altitude characterizes each of these small but very important terroir. Unifying these diversities, the Barolo offers harmony and complexity with an overall character of the zone.

The crus are vinified separately. Destemming and light crushing takes place before they are macerated. The fermentation is temperature controlled in stainless steel with indigenous yeasts. Malolactic fermentation takes place in oak barrels. The tartaric stabilization occurs naturally during the winter with the low temperatures. Each cru is kept separate and aged in neutral French oak barrels for 10 months and further 12 months in large casks. Final blend is a result of a further selection in the cellar of the best plots of the vintage. Approximately one year of stainless steel and 10 months of bottle aging before release.
