François Morissette is making wine in Niagara for those who appreciate his approach of minimal-intervention, purity, and low sulphur. He is classically trained, having worked and studied in Burgundy, France with some of the masters of the craft. He attempts to uncover the inherent nature of each and every vintage.
Cuvée Dix-Neuvième, even in its youth, shines with poise and class. The bouquet is open, fleshy, but understated. The palate is rich in supple orchard fruit and has equal amounts of translucency, gentleness and arresting precision all leading to a compact and persistent finish.
Chardonnay grapes sourced from Morisette’s 19th street vineyard on Twenty Mile Bench. The grapes were harvested mid October, hand-sorted and whole-bunch pressed. Fermentation by indigenous yeast proceeded steadily in a combination of old foudres and demi-muids (84%) and concrete (16%) and completed by early spring. The wine was left to age in its fermentation vessels, without battonage for a total of 20 months. Bottled unfiltered and unfined the fall following harvest.
