François Morissette is making wine in Niagara for those who appreciate his approach of minimal-intervention, purity, and low sulphur. He is classically trained, having worked and studied in Burgundy, France with some of the masters of the craft. He attempts to uncover the inherent nature of each and every vintage. The grapes are hand-picked solely on the basis of skin maturity and Francois Morisette and his team guide the the wine, rather than fix it along the way. The result, is a selection of wines that speak for themselves and where each wine has its own personality.
100% Chardonnay and a blend of home-grown and purchased grapes. An electric number, driven by vivacious fruit and undeviating, charged acidity. The aromas on the nose are cool, crisp and appealingly zesty. The vibrant palate is rich in lush fruit and invigorating freshness. The textured and surprisingly generous mouthfeel leads to a finish of penetrating salinity and pretty citrus flavours. A lightning storm in a blooming orchard.
