François Morissette is making wine in Niagara for those who appreciate his approach of minimal-intervention, purity, and low sulphur. He is classically trained, having worked and studied in Burgundy, France with some of the masters of the craft. He attempts to uncover the inherent nature of each and every vintage. The grapes are hand-picked solely on the basis of skin maturity and Francois Morisette and his team guide the the wine, rather than fix it along the way.
The grapes for this wine are fermented with natural yeasts in a combination of concrete, foudre and stainless steel. A blend of Pinot Noir, Cabernet Franc and Gamay, juxtaposing extreme drinkability, with subtlety, complexity, and densely layered flavour. Simultaneously spicy and bright, meaty and floral, with depth and freshness. A conflict free expression of contradictions and differences, bringing something wholly unexpected and wonderful to the forefront.
