François Morissette is making wine in Niagara for those who appreciate his approach of minimal-intervention, purity, and low sulphur. He is classically trained, having worked and studied in Burgundy, France with some of the masters of the craft. He attempts to uncover the inherent nature of each and every vintage.
Very drinkable with subtle complexity, and densely layered flavour. Simultaneously spicy and bright, meaty and floral, with depth and freshness. A conflict free expression of contradictions and differences, bringing something wholly unexpected and wonderful to the forefront.
The grapes for this wine are fermented with natural yeasts in a combination of concrete, foudre and stainless steel. A blend of Pinot Noir, Cabernet Franc and Gamay.
