Laurence Ployez is a third-generation winemaker at her family’s estate, which was established in 1930. Working with predominantly Pinot Noir and Pinot Meunier, grapes are sourced from Premier Cru and Grand Cru vineyards in the villages of Ludes and Mailly Champagne, Villedommange, and Vertus; Laurence’s plots total 2.15 ha. In addition to her own vineyards, she also works with growers who have been providing the estate grapes for more than 20 years; these growers make up another 12 ha of Premier Cru and Grand Cru vineyards.
Laurence is very concerned with showcasing each vintage and subsequent growing season in her wines and even with her NV bottlings, very little reserve wine is actually used; all grapes are handpicked and sorted by varietal, cru, and specific vineyard- they’re also all pressed individually as well. Only first press juice is used and light filtration is used on wines destined for stainless steel; wines aged in oak see no fining or filtration. With minimal dosage (3-4 g/L) on all her wines, Laurence’s “goal is to leave structure of each wine intact, allowing the true character and personality of the harvest to shine through.”
Tasting Notes
On the nose, elegant, rich notes of brioche with lifted flavors of white peach, pink grapefruit pith, orange blossom, and ginger. All of those aromas carry through to the palate with some added racy acidity, making way for a firm, saline backbone. Serve alongside a selection of Maritime oysters, your favourite seafood dishes, or richer fare- think foie gras.
Method
Made from 50% Chardonnay, 37% Pinot Noir, and 13% Pinot Meunier, the grapes come from a blend of first press juice via Premier Cru and Grand Cru plots; a small amount of oak aged red wine is added with grapes sourced from either Avenay or Mailly. Dosage is 4 g/L.
