Tasting Notes
A pronounced bouquet of green fruits, stone fruits, and tropical fruits occupy the nose, which carry on to the palate with added notes of citrus and salinity. Dry, medium-bodied, and full of texture on the mid-palate. Pair this with shellfish (oysters, steamed clams, butter-basted shrimp) or sushi and/or sashimi.
Method
Past vintages often included some Sauvignon in the blend, though this 2021 vintage of the Quail’s Gate Chenin Blanc is 93% Chenin Blanc and 7% Viognier. The Chenin Blanc grapes were cold settled and fermented in 90% stainless steel and 10% neutral French oak while the Viognier grapes were 100% barrel fermented in neutral French oak.
