Romate is a family run house that has been producing fine Sherry (Jerez) since 1781. The key factors in crafting this wine style are the white Albariza soils, the Andalusian sun and the native grapes, Palomino, Airen and Pedro Ximenes. The production process for Sherry is a long and relatively complicated one with many steps in which Romate combines traditional and modern techniques in order to create a consistent quality product.
Tasting Notes
Oloroso sherry is a dry style of sherry. Known to have a very long finish filled with nuts and dried berry fruit flavours. They are deeply rich and suitable for many different food pairings, or just sipping on their own after dinner as a digestif.
Method
Oloroso sherry is aged oxidatively, through slow maturation in the Solera system. Made from the palomino grape, the wine is fortified to 18% by using a neutral grape brandy and then aged and blended before bottling. The result is a deeply concentrated, full-bodied & dry wine.
