Nicolas Rossignol property is the 5th generation of family winegrowers in the Volnay appellation of Burgundy. He trained within various estates and has been in charge of winemaking at Domaine Rossignol-Jeanniard since 1994. Nicolas Rossignol created his eponymous estate in 1997 and sources fruit from the appellations of Volnay , Pommard , Beaune , Aloxe-Corton and Pernand-Vergelesses. In 2011, the two domains Rossignol-Jeanniard and Nicolas Rossignol merged under the name of Domaine Nicolas Rossignol. Covering an area of ​​30 hectares spread over 30 appellations, the vineyard is cultivated in a traditional way, in reasoned pest management, and according to methods inspired by biodynamics.
Method
The grapes are harvested by hand and sorted. After selection, the red grapes are mostly destemmed before going into temperature-controlled stainless steel vats for the primary alcoholic fermentation. Depending on the quality of the vintage, a very fine harvest will see some whole clusters added to the vats for structure and complexity in the finished wine. Fermentation proceeds slowly in the cold cellar, and the tannic structure is managed by frequent tastings and occasional pigeage (punching down of the cap of skins and seeds) rather than pumping over. After the alcoholic fermentation and a total 18 to 24 day maceration of grape skins and wine, the wine is transferred to into barrels, 20% new oak, where it it ages between 10 and 15 months before bottling. Bottled without filtration.Â
Our Thoughts
Volnay is an appellation within the Cote de Beaune in Burgundy (that only produces red wine) this is situated in between Pommard to the North and Meursault in the South; an enviable position for sure! This example comes to us from Domaine Rossignol-Fevrier and is an excellent introduction to what the village of Volnay has to offer. Here you will find some of the most fragrant, aromatic and intoxicating Pinot Noir wines in all of Burgundy. Expect incredibly layered and complex aromas of sweet cherries, strawberry candy, vanilla cola, rosehip, potting soil – and that’s just in its youth. This wine will continue to evolve for at least another 5-10 years and develop even more intoxicating aromas such as leather, truffle, tobacco and more. Bottled unfiltered and farmed and vinified according to Biodynamic practices, this Pinot truly has it all.
