Tucked away in the heart of the rolling hills near Pézenas, in the Midi, the authentic South of France, Domaine Sainte Cécile du Parc, is a recently reconstructed, family-run wine estate. The domaine covers 15 ha of organically farmed vineyards and olive groves. Since embracing the project in 2005, the family has taken on a major overhaul and investment; passionately committed to transforming their unique terroir into a quality-driven source of the finest wines.
Tasting Notes
On the nose, aromas of herbs, cranberry, cherry, and cinnamon. On the palate, those red fruits carry through with added notes of spice, leather and tobacco. Pair with BBQ’d burgers, differnet charcuterie boards, and/or grilled vegetables.
Method
Made from 60% Cabernet Franc and 40% Merlot, the grapes are certified organic, grown on sandy, clay with limestone south and east-west facing terraces. Hand harvested, low yields of 30 hl/ha and de-stemmed; alcoholic fermentation occurs in concrete vats, with controlled temperature and gentle pumping of the cap. The wine ages in small concrete vats for 12 months (80%) and French oak barrels (20%).
