As Patron Saint of Music, it was clear that Cécile’s vintages should honour her musical origins. Hence the “Notes” and “Sonatina” cuvées.  All of the domaine’s wines are harvested, vinified, aged and blended with the same care and attention to detail in order to bring out the power and personality inherent in each wine.

Tasting Notes

Deep purple colour. Opening aromas of herbs, cranberry, cherry and cinnamon, which translate to the palate with added notes of spice, leather and tobacco. Bold, opulent and delicious.


This wins is from the Pays de Caux appellation in the Languedoc-Roussillon.  The commune of Caux takes its name from the Occitan ‘caus” which means “lime” due to the limestone present here in the soil. 

Made from organic Cabernet Franc (60%) and Merlot (40%) grapes grown on sandy, clay with limestone South and East-West facing terraces. Hand harvest, low yields of 30 hl/ha and de-stemmed. Alcoholic fermentation in concrete vats, temperature control and gentle pumping of the cap.  The wine ages in small concrete vats for 12 months (80%) and and French oak barrels (20%).
