Tasting Notes

Biere de Coupage is a historical technique used in the Belgian farmhouse of blending smaller amounts of old sour beer into larger batches of fresh beer, either to add interest to the young beer, or to find a use for a barrel too sour to drink on it’s own. For Stillwell, the technique presented an opportunity to make a beer – dry hopped with Saaz, Sterling, and Perle. Crushable, or to consider. Cellar worthy, but always put in the fridge a day before opening.
