Tasting Notes
Straw yellow color with green flecks. The nose has white flower with lovely intensity of citrus fruit. The mouthfeel is round and the ripe fruit gives the impression of residual sweetness, but the wine is in fact dry. Focused acidity and fresh tree fruit flavours make this an easy to appreciate wine that will pair with a range of rich and flavorful foods such as asparagus with hollandaise sauce, shellfish or cream based soups.
Method
This is 100% Chenin Blanc hang harvested from the lieu-dit “l’Enchentoir”. The grapes are harvested over a number of pickings, in order to select the ripest bunches for the final wine. The grapes are pressed in a pneumatic press for 4 hours, the juice is aerated then settles before fermentation in concrete tanks from November to May. No sulfur is added during the vinification until bottling.
