Founded in 2017, Willibald is a first-generation farm distillery & brewery located outside of Cambridge in Ayr, Ontario. On the farm they strive to create progressive, high quality products that respect tradition but aren’t bound by it. They also have a restaurant on the farm serving up seasonally focused food and beverages all year round.
Tasting Notes
Clean, vibrant aromas of citrus peel and white flavours effortlessly blend together with aromas of stone fruit and field berries. The palate is light on its feet, but very full on bright hop flavour that leads into a crisp and snappy finish with lingering hop bitterness, but not too much! This beer is an ideal modern take on the American Pale Ale.
Method
The beer style that launched the craft beer movement. The American pale ale beer was inspired by the English pale ale, replacing its English counterpart’s earthy, herbal hops with generous additions of boldly citrus and pine-like American varieties. Newer, modern versions of this style – like this Fluff Pale Ale from Willibald – have decidedly less malt character to allow the intensely bright hops to shine through. This Pale Ale was brewed with Mosaic, Citra & Simcoe hops.
