Pecchenino Barolo Bussia DOCG

The Pecchenino winery has always been a family business. The first documents attesting the winemaking activity date back to the end of the 20th century, when the winery, managed by grandfather Attilio, had little more than 8 hectares. In the 1970s, the reins of the company passed into the hands of his son Marino and later, at the end of the 1980s in line with the generational changeover, his sons Orlando and Attilio took over the business.  It is to them that we owe the expansion of the vineyard area which today consists of 35 hectares, divided between the municipalities of Dogliani, Monforte d’Alba and Bossolasco where they grow a range of traditional Piemontese grapes. 

The vineyards are managed with the highest respect for nature, biodiversity and environment, by adopting a sustainable management in order to focus on the quality of grapes.

Venturini Baldini Montelocco Rosso

Venturini Baldini was founded in 1976 on an historic 16th century estate in the hills between Parma and Reggio Emilia, the heartland of Lambrusco wine making. Of their 135 hectares, only 30 hectares are vineyards, the remainder being left as wild woods and pastures that buzz with life and biodiversity.  As one expects from great sparkling wine farming, Venturini’s vines are planted among the south facing slopes of their sandy clay foothills that roll from 300-400m above sea level with excellent drainage and a wide diurnal temperature. Moreover, Venturini was among the first in the region to obtain organic certification (1976). Their name has been synonymous with the highest quality Lambrusco for decades now.  

They were fortunate to have one of Italy’s best-known winemakers, Carlo Ferrini, overseeing their wine production since 2015.  His professional career spanned more than 40 years of working with many iconic Italian wine estates. In early 2021, Venturini Baldini announced Ferrini’s retirement from the estate and replacement by the equally famed Riccardo Cotarella , widely considered Italy’s number one Eonologist at present.  The wines continue to impress local and international markets.

Rombeau LE BOTANISTE FIG 4 GSM

One of the most storied estates in RoussillonDomaine de Rombeau traces its origins to 1727, when the de la Fabrègue family first arrived in Rivesaltes from Lyon. By 1850, the family had amassed vineyard holdings and became of one the region’s first to bottle wine. Tanks that date from that period can still be found on the estate. The family persevered through phyolloxera and successive World Wars, continually delving deeper into the region’s traditions while remaining open to the possibilities of the future. As sixth-generation family winemaker Philippe Raspaud said: “Tradition is alive.” Chateau Rombeau grows many varieties of grapes and produces a range of high quality and excellent value organic wines in the Languedoc Roussillon.

Francis Ford Coppola Diamond Collection Claret

Winemaking has been a Coppola family tradition for several generations. Agostino Coppola, Francis Coppola’s grandfather, used to make wine in the basement of his New York apartment building using concrete vats he constructed himself. The wines that Francis Coppola makes today aren’t the same as those Agostino made, but they are produced in the same spirit—for sharing with friends and family.

Domaine Tempier Bandol Rose

The iconic Domaine Tempier has been an active family run farm since 1834 and was given to “Lulu” Tempier and Lucien Peyraud in 1936 as a gift from Lucien’s father. Thanks to Lucien’s dedication in helping revive the Mourvedre grape, Bandol is often cited as being a “grand cru of Provence”.  The terroir of Domaine Tempier is varied and complex.  The land is made up of a patchwork of geologically diverse plots spreading on over a 60 hectare area.  Domaine Tempier has always been respectful and faithful to mother nature. The entire farming process is aligned to the rhythm of the seasons and the lunar calendar; they are an organic and biodynamic wine estate.  

Domaine Tempier’s iconic and much anticipated rosé is one of the last rosés to hit the shelves at Bishop’s Cellar during the calendar year.  This wine arrives at the end of summer and is a perfect wine to enjoy the transition from summer to fall which is always such a glorious season in Nova Scotia!

Jean Max Roger Cuvee GC

The Roger family descends from a long line of winegrowers from the village of Bué in the appellation of Sancerre.  Jean-Max Roger took over the four hectares of vines left to him by his parents in the early 1970s and expanded the estate to its current size. Beginning in 2004, two of his three sons, Etienne and Thibault, came back to work at the estate after various professional careers in France and abroad. His third son, Xavier, lives his passion for wine in the Roussillon region. Today, the estate covers a surface area of 26 ha in the Sancerre AOC area of production which is located along the Loire River and also includes 6 ha of vines located in the Menetou-Salon AOC area of production where the first plantations date back to 1981.  

Fertilizers are either organic or based on composted manure. Cover crop and ploughing of the soil are managed mechanically according to risk of erosion and the vines’ needs for water and nutrients.  New techniques for cover crops and green manure, derived from conservation agriculture, are currently being tested to structure the soil and enrich it naturally while avoiding the negative impacts of mechanical labour and frequent use of machinery. New plant protection strategies are also being experimented with in the aim of reducing the number of treatments over the course of the year.  They strive to uphold a sustainable approach to viticulture and as a result their growing methods are constantly evolving so as to preserve the vines and the terroir while not compromising on the production of top-quality grapes.

Villa Cafaggio Chianti Classico

With records that date back to 1408, Villa Cafaggio’s estate was then referred to as “Cahago,” which means “enclosed, cultivated field.” Later in the fifteenth century, there was evidence to suggest that the property was owned by Benedictine monks of Siena. After the monks, the property would have many owners (most notably, the famous Niccolini family of Florence) but one of the more intriguing owners would be the Florentine Hospital of Santa Maria Nuova; it was believed that various fruits and vegetables were farmed during their time of ownership, along with the cultivation and production of grapes for wine and olives for oil. The land would eventually be purchased by the Farkas family in the 1860s and in 1967, the proprietors decided to renovate the wine cellars as well as replant the vineyards and olive groves. 

In present day, Villa Cafaggio covers approximately 60 ha, 30 ha dedicated to vineyards and 3 ha for olive groves- the rest of the property is entirely woodlands. Nestled in “Conca d’Oro,” which means “golden basin,” this area is known as one of the best for producing Chianti Classico. Owned, operated, and managed by La-Vis Group, a financial holding company from Trento, they produce four Chianti Classico wines and two “cru” wines; Cabernet Sauvignon and Merlot, respectfully.

Tornatore Etna Bianco

A rising star in the Etna region, Tornatore is becoming one of the region’s biggest and most respected wineries. Their vineyards are located at an altitude of 1,000 meters above sea level on the north side of this active volcano.

Out of a Sicilian family heritage that traces back to the 17th century, the Tornatore’s Mount Etna wine ventures began in 1865. Today the family’s operations are headed by Giuseppe Tornatore, a businessman whose expertise led to the acquisition of some of the region’s finest north-facing vineyards in the early 2000’s. That heritage and the Tornatore’s profound respect and understanding of the land is showcased in wines that capture the essence of Etna, deftly balancing concentrated flavors, complexity, freshness and refinement.

The company lies in the northern side of Mount Etna, the highest active volcano in Europe. The soils have volcanic origin and were created through the disintegration of lava, ash and stones from previous volcanic eruptions. The climate on the northern side of the Etna is characterized by mild temperatures, and more rain fall reflecting the influence of the Volcano. The combination of soil, climate and the skill of the winemakers, have made the northern slope of Etna an ideal area for the production of high-quality wines. “Our vineyards and our winery are only a few kilometers from our family home. Our entire family is rooted there. We have the greatest respect for this region, and we believe we have a responsibility to be stewards of Etna and to reflect its distinct character in our wines.” – Giuseppe Tornatore

Am Stein Innere Leiste Spatburgunder

Weingut Am Stein is nestled on the side of the most famous Franconian vineyard, the Würzburger Stein. The domain has been in the Knoll family for five generations and is currently in the hands of Ludwig and Sandra Knoll. It is located on the Würzburger Stein, the most famous vineyard near the city. At 27 ha it is also one of the bigger private domains in the area. The family Knoll is lucky enough to own parcels in the best terroirs of the region; the Würzburger Stein, Stettener Stein and Innere Leiste. Vineyard work has followed biodynamic principles since 2007.

The GlenAllachie 15 Year Old Speyside

The GlenAllachie Distillery was one of the few post-war distilleries designed by William Delmé-Evans and focused on using gravity-fed methods to reduce energy requirements. The distillery was built in 1967 and sits on the eastern edge of Ben Rinnes mountain where it is rather exposed to the elements. For most of its life, the GlenAllachie Distillery was a production distillery used to produce large quantities of malt whisky for use in blends like Chivas Regal and Clan Campbell. It wasn’t until the 1990s that the distillery saw its first official bottling under its own label.

Samuel Smith - Nut Brown Ale

The Samuel Smith brewery in Tadcaster was founded in 1758 and is Yorkshire’s oldest brewery. Samuel Smith is one of the few remaining independent exporting breweries in England and is the last to utilize the classic Yorkshire Square system of fermentation solely in stone (slate) squares. 

The rich Samuel Smith strain of yeast at the brewery dates from the early 1900s. Hops are hand-weighed by the master hop blender, and the brewing water is drawn from the original well, sunk over 250 years ago.

Samuel Smith produces over a dozen beers, but they are most known for their ultra-traditional English ales. The Organic Pale Ale, Taddy Porter, Oatmeal Stout, Imperial Stout, and Nut Brown are all considered some of the world’s best examples of their styles and are often seen as the benchmark in their categories.
