After decades learning the science of distillation and the art of making fine tequila, Master Distiller Cirilo Oropeza decided he would dedicate his life to making high quality accessible tequila.
In 1995, Cirilo joined forces with a local entrepreneur who shared his vision and together they created the state-of-the-art Destiladora San Nicolas.
Espolòn Tequila is named for the spur of the rooster, a powerful symbol of national pride in Mexico and also a reflection of the pride Destiladora San Nicolas takes in its products.
Tasting Notes
An excellent balance between soft pear fruit, wild flowers, and sweet earthy agave and the toasty nuts, and subtle baking spices imparted from the oak ageing.
Method
The agave for Espolòn is sourced from plants grown at 1800–2000 meters above sea level in the “Golden Triangle” of the Highlands in Los Altos.
Fermentation takes place is large temperature controlled stainless tanks to preserve the delicate aromatics. From there, the wort or “mosto” is distilled in a combination of column and pot stills. The column still produces a light, crisp, and fruity distillate while the pot still produces an oily and more earthy spirit.
After distillation, the blended spirit is aged in 200L light toasted virgin American oak barrels for 3 to 5 months in order to impart some richness and complexity without smothering the purity of the tequila with woodiness. This finely balanced tequila is then bottled at 40% ABV.
