2 Crows Brewing – Spon de Replay Wild Ale w/Rhubarb & Honeycomb (375ml)

Over 6 years ago, 2 Crows Brew master, Jeremy Taylor, brewed golden wort (unfermented beer) and pumped it into a shallow, uncovered vat in his backyard. While the sugary wort cooled, it allowed for natural airborne yeasts and *good* bacteria to come into contact with each other. This was the start of a long and slow fermentation, where the inoculated beer was put into oak casks and left to ferment over a number of years. 

Once the beer was nearing completion, the brewers added whole clusters of fresh rhubarb into the casks, along with honeycomb from Jeremy’s own beehives – all from his backyard. The spontaneously fermented beer then started to ferment again on the sugars from the rhubarb and honeycomb. Once completed, the beer was bottled conditioned and left to mellow in bottle for a couple more years. 

A labour of love, an investment in time, and a resulting beer that is 100% Nova Scotian and 100% unique.
