Distilleries et Domaine de Provence is situated in the Alpes de Haute-Provence department of France, an area rich with plant life due to its unique microclimate. Nestled among rolling lavender fields, sun-drenched hills, and wild herbs, the distillery draws from a landscape that seems tailor-made for crafting fine spirits. Founded in 1898, the family-run business has preserved artisanal production methods, hand-harvesting every plant that goes into their spirits with care and tradition passed down through generations. Absente 55 is a “contemporary interpretation” of the traditional spirit and is inspired by the Provençal terroir. Infused with wormwood and a bouquet of regional botanicals, it captures the bold, aromatic soul of Provence in every glass.
Tasting Notes
From the distillery: “Colour: a beautiful light green with cleay shiny glints of yellow.
Nose: A subtle aroma of absinthe blended with anise, mint and spices.
Mouth: round aniseed attack moving onto a well-structure feel thanks to the presence of the amoise, finishing with the fresh, spicy notes (absinthe, lemon balm and mint) which give Absente its length of flavor.”
Method
The ingredients are mixed prior to production and are then steeped and distilled. Taste tested for quality before filtering and bottling. Storage: at room temperature, not above 25°C or keep chilled.
Traditionally Absinthe is served by mixing it with ice cold water and adding some sugar to add sweetness. By adding water you create a visually captivating effect called “louching” where the once clear drink turns cloudy.
