Capuano Ferreri is a well established and respected family run Burgundian estate that farms 8 hectares of vines in Cote de Beaune and Cotes Chalonnaise.  From vine to bottle, they take meticulous care of the entire production process and craft high quality wines that beautifully express their terroir.    

Tasting Notes

Aromas of tree fruit, citrus and white flowers.  Luscious, smoothly textured and beautifully integrated oak on the palate with flavours of peach, apple and lemon, accented by spice, wildflower honey, light toast and nuts.  Wonderful texture and concentration with excellent length making for a white wine with aging potential.  Enjoy with white meat, pastas in cream sauce, shellfish in butter or soft creamy cheeses. 

Method

This wine is 100% Chardonnay from the village appellation of Chassagne-Montrachet in the southeast of the Cote de Beaune region of Burgundy.  Chassagne Montrachet makes red and white wines, but specializes in whites, where they are some of the most famous and sought after in the world.  It boasts 55 Premiers Crus and 3 Grand Crus, which speaks to the prestige of this terroir. 

At Capuano-Ferreri, the work in the vineyard is carried out manually and in a traditional and artisinal manner.   They practice lutte raisonnée and only treat for vine diseases when absolutely necessary and with a awareness and respect for the surrounding environment.   Vinification is done with modern equipment while respecting tradition.  The harvested grapes are pressed to obtain the must, which is cooled to 5 – 6 degrees then settled; alcoholic fermentation in thermoregulated vats lasts around 20 days before going into cask for malolactic fermentation that takes place during the winter and finishes up in May.  The wine spnds about a year in oak, 30% of it new, before bottling.
