For 50 years the Domaine has been crafting sparkling wines under the AOC of Blanquette and Cremant de Limoux. It is recognized as one of the best quality producers in the region and its wines are consumed locally as well as in export markets of the USA, Canada and Japan.
At the domaine, they are aware of the importance of protecting the environment and respecting biological diversity, they have always wanted to reduce the negative effects of treatments. Tasting Notes
This wine shows aromas of brioche, green apple, lemon curd, acacia flowers and apricot. The same medley of toast, fruit and floral notes carries onto the palate. This is a dry traditional method sparkling wine that has approachable bubbles with a creamy mouth filling texture and great harmony of yeasty notes, fruit character and freshness.
Method
Produced around the city of Limoux, in Languedoc, in southwestern France. Traditional method sparkling wines have been crafted here since before Champagne. The main grape of the region and this wine is Mauzac, locally known as Blanquette. Chardonnay makes up the final 10% of the blend. The wine obtains its bubbles by a second fermentation in bottle and resting for 12 months sur lies before the yeast sediment is removed.
