Chateau Climens Barsac 2016 (375ml)

Barsan lies on the left bank of the river Ciron, across from the more famous sweet wine appellation, Sauternes.  Most of the Barsac appellation is on a clay limestone plateau and most vineyards are bordered by low stone walls that were built from the rocks that came out of the soils.  Barsac only makes sweet wines.  The special microclimate here prmotes the growth of Botrytis cinerea, a mold also known as “noble rot”.  The many rivers in the area bring damp morning mists which promotes the growth of this mold.  The later day sunshine prevents the grapes from fully rotting from the mold.  Botrytis causes the grapes slightly shrivel on the vine and also creates chemical changes within the berry which adds to the aromatic complexity and texture in the final wine.  It’s all kind of magical! 

The yields are exceptionally low, production is very limited; just 12hl/ha.  Chateau Climens has been farming according to biodynamic practices since 2010 (Biodyvin certification since 2014).  Hand picking is a requirement here.  The grapes are pressed and vinified in small batches in previously used French oak barrels.  Aged 20 to 22 months.
