Nestled in the heart of Côte des Bar, in Aube, near the village of Buxeuil, Vincent Couche established his 15 ha estate in 1996 and all of his vines are certified organic and biodynamic since 2008. He became the first in Champagne to have both his winery and vineyards certified organic/biodynamic. Spread out over two separate vineyards; 3 ha of south facing Chardonnay on chalky soils in Mongueux and 12 ha in Buxeuil of mainly Pinot Noir on kimmeridgian, clay-limestone, or clay-marl soil. The goal is to vinify authentic, quality wines with the fundamental principles of biodynamic farming; this type of farming allows the vines to thrive in a balanced and harmonious environment, with the diversity of fauna and flora being a key component.
Tasting Notes
Golden hue with a slight blush tinge. Fresh aromas of apple skin, blanched almonds, wet stone, chalk. The flavors burst from the glass: cherry, Meyer lemon, quince paste, hazelnut mingle with chalky limestone notes. The palate is expansive, with a delicate mousse and a long, pleasing finish. Enjoy on its own with seafood, raw fish, appetizers, cheeses or even creamy pastas and risotto.
Method
This is an assemblage of 31% Pinot Noir, 35% Chardonnay, 34% Pinot Meunier grown in the villages of Mongueux and Buxeuil in the Cote de Bar of Champagne. This is a Demeter-certified biodynamic wine (the 1st biodynamic certified wine in Champagne) as well as certified organic wine. The grapes are planted on chalk and marl soils. The wine ages for months on the lees before disgorging. It is bottled unfiltered and unfined.
