Lightfoot & Wolfville is owned and operated by the Lightfoot family who have been farming in the Annapolis Valley for eight generations. Lightfoot & Wolfville brings a light touch and enlightened approach to both the agricultural and artisanal aspects of viticulture and winemaking. They work in harmony with nature and letting the land offer up its innate best, without subjecting it to aggressive inputs. The winery is located on the home farm site, this land has been in Michael’s family for four generations.
Tasting Notes
Pale yellow-gold in the glass with notes of spiced Granny Smith apple, honeyed lime and white flower on the nose. Fresh and vibrant in style, with harmony between the lively cool climate acidity and bright, primary fruit flavours. Will continue to evolve in bottle, gaining in complexity and depth over time. Pairing suggestions include moderately spiced aromatic dishes, roasted poultry or pork, salty cheeses and seafood such as lobster thermidor or snow crab.
Method
The Lightfoot & Wolfville Terroir Series is a collection of small-lot, single vineyard, single varietal wines designed to showcase our unique sense of place in the Annapolis Valley. Label imagery reflects this theme and helps to tell the story of where this wine comes from. The bees, butterflies and cow horns represent our biodynamic farming philosophies and the concept of working in harmony with nature. The eye represents the human element within the whole-farm system and the role we play in terroir expression.
This Riesling is 100% estate-grown (clone 21B) with all grapes sourced from the Lightfoot Home Farm Vineyard in Wolfville, Nova Scotia; hand-harvested and whole cluster pressed on the 4th of November. Fermentation was spontaneous with wild yeasts in stainless steel. This is an off dry Riesling with 12 g/L RS.
